Makes enough for 10 servings

To make the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Premix (yields 850ml, enough for 10)

100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Method

For the Cordial: Put all the ingredients inside a pot, heat until it reaches a light boil, agitating to dissolve. After that, remove from the stove and let it to cool down fully. Decant to a clean bottle, close it and refrigerate it in the refrigerator, where it will keep for up to a month.

Preparing the Cocktail Base: Pour the specified spirits and syrup in a big jug, let it rest for 60 minutes, then strain preferably using cheesecloth, to ensure it's completely strained.

For serving: Measure 85ml of your cocktail base into your cocktail shaker containing ice, gently stirring carefully for a minute to chill. Filter to a chilled martini glass or similar, garnish with some cranberries adding the final touch by giving it a brief mist of mandarin oil over the drink.
